4 Ways to Cook a New York Strip Steak

There are several different ways to cook a strip steak or a New York strip. Here are four of our favorite ways to cook a New York strip. 

What is strip steak?

Strip steak, also called strip loin, Kansas City steak, New York strip or top loin, comes from the short loin of the cow. This muscle tissue is especially tender. It’s a great cut for an everyday steak that isn’t difficult to cook and tastes delicious with your favorite sauce or just a sprinkle of salt and pepper.

Tips for cooking strip loin

As with many types of steak, a strip loin steak benefits from a high heat sear. This helps develop a flavorful “crust” on the meat that also seals in moisture to keep the steak juicy and tender inside. Because it has a lower fat content than other steaks, this cut of meat doesn’t char as easily during cooking, especially over an open flame.

Before any type of cooking, make sure that the steak is at room temperature. This produces juicier, more evenly cooked meat.

When cooking strip loin, all you really need for seasoning is salt and pepper. You could also choose a dry spice rub, or use a marinade to add flavor and up the succulent factor — never a bad thing. Here’s a recipe for bourbon-marinated strip loin to give you a place to start.

Another tip for cooking strip loin is to let it rest after cooking. In fact, allowing meat to rest for at least three minutes after cooking is a relatively new “rule” laid out by the USDA, since it lets the internal temperature remain high enough to destroy pathogens. It also helps the meat retain moisture before you slice into it.

Cook New York strip on the grill

Cooking steak on the grill has a certain allure, especially in warmer months. Cooking steak on the grill requires keeping a close eye on the heat, since open-flame cooking can be more unpredictable than cooking in an oven. Make sure your grill grates are well oiled, and give the grill time to heat up before you begin. One benefit of cooking on the grill is getting those signature grill marks on your final product. Pan-sear the New York strip on the stovetop

Pan-searing a strip steak is a great option when you don’t feel like firing up the grill. You’ll want the pan nice and hot in order to get a good sear. Add a high-heat oil, butter, or a combination of both just before putting the steak in the skillet. Cooking the steak in a pan ensures a more evenly browned crust. Once you remove it from the pan to let it rest, you can cook a sauce in the same pan for an efficient one-pan meal. Here’s a one-pan strip steak recipe to try.

Another tip for pan cooking a strip steak? Baste it in butter. After searing, reduce the heat to medium-low. Add butter to the pan, along with some fresh herbs and minced garlic. Grasp the pan’s handle, tilt the pan toward you so the butter pools on one side, and then quickly and methodically spoon the butter over the steak for another minute or so.

Broil New York Strip in the oven

Broiling your New York strip is another option that simply relies on heat from above rather than from below. One trick with this method is to add a pat of butter on top of each steak before broiling. You’ll flip each steak just as you would if you were cooking it on the grill or in a pan, and then let it rest after.

Cooking sous vide can be a game-changer for busy home cooks. This method uses a hot water circulator to slowly and evenly cook meat in a vacuum-sealed bag. It’s a handy trick for getting meat cooked with precision and predictability. You won’t overcook the meat using a sous vide circulator, and all you have to do is give it a finishing sear.
